Disney is known for magical things. Young and old relish in the magnificence that inside this beloved theme park. But now there’s no need to travel to Anaheim, California to indulge in their delicacies. Our prayers from the sweet heavens have been answered with this DIY Disneyland Tiramisu Twinkies! The Disney Diner shows us how to recreate this dessert from Disney’s Pop Century Resort. The recipe calls for 14 Twinkies, 1/3 cup water, ½ cup sugar, 2/3 cups cooled brewed espresso, 1 ½ cup heavy whipped cream, more sugar, vanilla extract, and a pound of mascarpone cheese. Also, don’t forget some softened cocoa powder for dusting. She starts by slicing the Twinkies in half, gently. She places the Twinkie halves into a 9 x 13-inch aluminum pan. She explains that the pan fits seven Twinkies 14 halves, and it is perfect for the first layer. Next is the espresso syrup. Ingredients 3/4 cup (180 mL) boiling water 1 3-ounce box pineapple Jello gelatin 1/4 cup (60 mL) cold water 1/2 cup (120 mL) vodka 1/4 cup (60 mL) butterscotch schnapps 1/4 cup (60 mL) Irish cream Maraschino Cherries Directions Dissolve the gelatin into the boiling water in a large bowl. Measure and pour the schnapps, vodka, Irish cream, and cold water into the bowl. Thoroughly stir until well mixed. Allow the mixture to cool a little. Add a maraschino cherry in plastic shot cups. Carefully pour the Jello mixture over the cherries. Chill in the refrigerator to allow the mixture to fully set and harden.

  INGREDIENTS Serving: 1 1 1/2 ounces Jamaican rum (preferably Appleton Estate V/X) 1/2 ounce Jamaican rum, funky (preferably Smith and Cross) 3/4 ounce lime juice 1 ounce honey syrup (see Editor’s Note) 1/2 ounce egg white Garnish: orange peel and Angostura bitters Glassware: cocktail or coupe DIRECTIONS Add ingredients (in the order listed above) to a cocktail shaker. Shake without ice for 6 seconds to emulsify egg white. Add ice and shake until chilled. Double-strain into a coupe or cocktail glass. Express an orange peel over top of the cocktail and discard. Using an eyedropper, drop Angostura bitters over top of the foam. Drag a toothpick through them to create a design. EDITOR’S NOTE In a jar, add 6 ounces of honey and six ounces of hot water. Cap, and shake to dissolve. Store in the refrigerator for up to two weeks.

Ingredients: 20 whole graham crackers 2 cups cold milk 1 package vanilla or chocolate instant pudding/pie filling 13/4 cup thawed non dairy whipped topping 2 can (21 oz each) cherry or blueberry pie filling Directions: Line 13 x 9 inch pan with some of the graham crackers, breaking crackers if necessary. Pour cold milk into bowl. Add pudding mix. With electric mixer at low speed, beat until well blended, 1 to 2 mins. Let stand 5 min, and then blend in non dairy whipped topping. Spread half of the pudding mixture over crackers. Add another layer of crackers. Top with remaining pudding mixture and remaining crackers. Spread pie filling over crackers. Ingredients 12 ounces mushrooms (your choice), diced finely 4 tablespoons butter 1/8 teaspoon dried thyme leaves 1/4 teaspoon salt 1/4 teaspoon black pepper 1 sheet puff pastry (from a 17.3-ounce package) 1 egg beaten with 3 tablespoons water Instructions 1 _ In a large sauté pan, melt the butter and add the diced mushrooms, thyme, salt, and pepper. Sauté until the liquid from the mushrooms evaporates and they become a little brown and caramelized. Set aside to cool. 2 _ Take the puff pastry sheet and roll it into a uniform rectangle about 10 by 12 inches. 3 _ Spread the mushroom filling over the surface of the pastry and then roll it jelly roll-style starting with the long side. 4 _ Refrigerate the roll for about 20 minutes before slicing into 1/4-inch rounds. INGREDIENTS: 5 whole free range eggs (separated – 5 yolks and 5 whites) 3 shot glasses of Kahlúa liqueur 50g – 4 tbsp caster sugar 500g – 16oz Mascarpone (room temperature) 400ml – 2 us-cups strong espresso coffee  (make it fresh, please do not use instant) 500g – 17oz lady fingers (one very large pack). Cocoa powder (unsweetened) 50g – 2oz Dark chocolate DIRECTIONS: Pour your espresso coffee into a dish, add 1 tbs sugar and the Kahlúa, set aside. Separate 5 egg yolks in one mixing bowl and 5 egg whites in another. Add 3 tbs sugar to the yolks. Add a pinch of salt to the whites. Whisk yolks until sugar and yolks appear pale, thick and creamy with little bubbles on top. Combine the mascarpone cheese into the whipped egg yolks until it becomes a smooth custard. In the other bowl, whisk egg whites until they reach soft peaks. Pour and fold the whites delicately into the egg yolk and mascarpone mixture  until combined. Line a rimmed baking sheet with parchment. Draw an 8-inch circle on parchment, then flip. Mix whites, sugars, and salt in a mixer bowl set over a pan of simmering water. Whisk constantly until sugars dissolve and mixture is warm, about 3 minutes. Remove from heat, and whisk on medium-high speed until stiff peaks form, about 8 minutes. Ingredients 2 cups heavy cream, well chilled 1/3 cup confectioners’ sugar 1/3 cup smooth natural peanut butter (not unsalted) 1 box (9 ounces) chocolate wafer cookies Instructions 1 _ In a large bowl, whip 1 1/2 cups cream with sugar until soft peaks form. In a small bowl, whisk peanut butter until soft and smooth; whisk in 1/2 cup cream until light and fluffy. Fold peanut-butter mixture into whipped cream until incorporated. 2 _ Dab the bottom of 6 cookies with a very small amount of cream mixture and arrange in a circle on a serving plate; place 1 cookie in the middle of circle. Top with cup cream mixture, spreading outward to cover all but outer edges of cookies. Repeat process five more times (staggering the cookie layers), ending with cream. Ingredients: 2 Potatoes 8 Slices of bacon 4 Slices of smoked turkey 1 Cup of grated cheddar cheese 1/2 Cup of sour cream 1 Tablespoon of hot sauce 2 Tablespoons of diced green onions Tools: Apple coring tool 8 Toothpicks Two pieces of aluminum foil 2-4oz. Apple smoked wood Gloves Directions: Start by washing and drying your potatoes to remove all the dirt. Use a sharp knife to poke a few holes in your potato and then wrap each one in aluminum foil. You’ll want to leave your potatoes on the grill for about twenty minutes but make sure to check on them and flip them every five minutes. Mix one tablespoon of your favorite hot sauce into your sour cream. Leave your mixture in the fridge until you’re ready to use it.
