CHOCOLATE-RAISIN MASCARPONE CAKE Ingredients 1 cup raisins … 3/4 cup brandy 8 oz semisweet chocolate 16 tablespoons unsalted butter, at room temperature 1 3/4 cups sugar 8 eggs 1 cup all-purpose flour, sifted 13 oz mascarpone cheese 1 cup heavy cream, whipped Directions Soak the raisins in the brandy until plump, at least 3 hours or overnight. Preheat oven to 350 degrees f. Butter a 9-inch springform cake pan. Line the bottom of the pan with a round of parchment or waxed (greaseproof) paper. Melt the chocolate in a double broiler over hot, not simmering, water. Set aside to cool. Cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, beating well after each addition. Add the cooled, melted chocolate and fold in the flour. Drain the raisins, reserving the brandy, and fold them into the mixture. Pour into the prepared pan. Bake for 40 minutes, until a skewer inserted in the middle comes out clean. Let the cake cool in the pan. LUCKY CHARMS RAINBOW VODKA INGREDIENTS 2 cups Lucky Charms cereal 6 ounces flavored vodka (whipping cream or marshmallow flavor) DIRECTIONS Separate the marshmallows from the Lucky Charms cereal. Place 6 Lucky Charms marshmallows of the same color in each of 6 shot glasses. Pink marshmallows in one shot glass, yellow in another, and so on. Pour one ounce of vodka into each shot glass. Let the marshmallows dissolve. Serve as vodka shots or mix into your favorite sweet martini recipe!
Candy Corn Balls … Put 12 cups popped popcorn in a mixing bowl large enough to allow for stirring. Mix in 1 1/2 cups candy corn. Fill a medium-size bowl with ice water and set out a cookie sheet or a piece of waxed paper. Mix 3/4 cup brown sugar, 3/4 cup corn syrup, 6 tablespoons butter, and 1/2 teaspoon salt in a 4-quart pot. Bring to a simmer over medium-high heat, stirring constantly. Stop stirring and let the syrup boil until an inserted candy thermometer reaches 275º (a parent’s job). Carefully pour the syrup over the popcorn and stir well with a wooden spoon to evenly coat the kernels and candy. Cool slightly. Quickly dip your hands into the ice water and shape the popcorn into 3-inch balls. Place on waxed paper to cool completely. Tightly wrap the balls individually in plastic.

Grandma’s Apple Crisp 1 cup brown sugar 1 cup rolled oats… 1 cup all-purpose flour 1/2 cup butter, melted 3 cups apples – peeled, cored and chopped 1/2 cup white sugar 2 teaspoons ground cinnamon Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan. In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture. Bake in the preheated oven for 40 to 45 minutes, or until golden brown.
