These are simple to make and Delicious, A Breakfast favorite at my house~ 1/2 cups Bisquick 3/4 cup buttermilk 3 Tbps sugar 1/4 tsp vanilla 1 cup cheddar cheese, shredded Preheat oven to 425. Stir together all ingredients just until combined. Scoop into a mini muffin pan coated with cooking spray. Bake 12-15 minutes, until golden. **I used a medium cookie scoop and got 20 muffins~

Ingredients: 1 egg 2 tablespoons milk 1 (16 1/3 ounce) can l flaky refrigerated biscuits 4 -6 slices crispy bacon, cooked and broken into 1/2-inch pcs 4 ounces shredded cheddar cheese 1 (4 ounce) can mushroom pieces 1/4 cup finely chopped green onion, both green and white parts (4 medium) cooking spray Directions: 1. Preheat oven to 350°F. 2. Spray 11×7″ or 12×8″ (2 quart) glass baking dish, with cooking spray. 3. In a large bowl, beat egg and milk with wire whisk until smooth. 4. Separate dough into 8 biscuits; cut into quarters. 5. Gently stir biscuit pieces into egg mixture to coat evenly. 6. Fold in bacon, cheese, mushrooms and onions. 7. Spoon mixture into sprayed dish; arrange biscuit pieces in a single layer. 8. Bake for 23-28 minutes or until golden brown. 9. Cut into squares or just a pull-apart. 10. Serve warm.

  Chocolate Molten Cakes Ingredients 6 oz bittersweet baking chocolate 10 Tbsp unsalted butter 1 1/2 c powdered sugar 1/2 c flour 3 whole eggs 3 egg yolks 1 tsp vanilla 1 tsp espresso powder (optional, but well worth it) *see end of directions for notes on espresso powder Directions 1. Preheat oven to 425. Grease 6 (6 oz.) custard cups, dust with cocoa powder; place on baking sheet. 2. Melt chocolate and butter (either in the microwave, or on the stove) until butter is melted. Stir with wire whisk until chocolate is melted. (If doing this in the microwave, do not over heat the chocolate.) Add the vanilla. 3. Add powdered sugar, flour, and espresso powder; mix well. 4. Add whole eggs and egg yolks; beat until well blended. Divide batter evenly into custard cups. 5. Bake 14-15 minutes or until cakes are firm around the edges but soft in the center.   No Bake Lemon Oreo Cheesecake… INGREDIENTS: 12 Lemon Oreo Cookies crushed into crumbs 1 (8 ounce) package cream cheese, softened zest of two lemons 2 tablespoons freshly squeezed lemon juice 1/2 teaspoon pure vanilla extract 4 tablespoons lemon jello powder 1 (8 ounce) tub frozen whipped topping, thawed DIRECTIONS: Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer. In a large bowl, with an electric mixer, beat the cream cheese until smooth. Add lemon zest, lemon juice and vanilla and mix to combine. Sprinkle the jello powder onto the cream cheese mixture and mix on medium-high speed until thoroughly combined. What You’ll Need 1 can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Cream of Mushroom Soup 1/2 cup nonfat milk 3/4 pound lean ground beef (80% lean) 1 medium onion, chopped (about 1/2 cup) 1 tablespoon chili powder 1 can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Tomato Soup 4 lasagna noodles, cooked without salt and drained 1/2 cup shredded reduced-fat Cheddar cheese How to Make It 1 Stir the mushroom soup and milk in a small bowl until the mixture is smooth. 2 Cook the beef, onion and chili powder in a 3-quart saucepan over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat. 3 Stir the tomato soup in the saucepan and cook until the mixture is hot and bubbling. 4 Layer half the beef mixture, 2 lasagna noodles and half the mushroom soup mixture in an 8-inch square baking dish, trimming the noodles to fit the dish, if needed. Preheat oven to 350 degrees 2. Combine the butter, cocoa powder, sugar and beaten eggs and mix well. 3. Add flour, salt, and vanilla to the mixture. 4. Pour into 9″ x 13″ pan. 5. Bake at 350 degrees for 23-25 minutes. 6. Cool completely. 7. Make Frosting by combining butter and powdered sugar and then other ingredients, mixing on medium-high speed. 8. Spread frosting on chilled cake and then chill again. 9. Melt a bag of semi-sweet chocolate chips by pouring into microwave safe bowl and microwaving on high 30 seconds and then stirring – repeat until melted. 10. Spread for top layer. 11. Chill.

Pizza Casserole This is a very versatile recipe. You can add or omit any pizza topping ingredients to suite your taste. Ingredients: 1 (16 ounce) package uncooked rotini pasta 1 lb ground Italian sausage 1 (24 ounce) jar pasta sauce 1 (16 ounce) container cottage cheese 1 (2 1/4 ounce) can sliced black olives, drained (optional) 1 (4 ounce) can mushrooms, drained 1 small-medium onion sliced 1 medium green bell pepper sliced 12 ounces shredded mozzarella cheese 2 (3 ounce) packages sliced pepperoni Directions: Preheat oven to 350 degrees. Lightly grease a 9×13 casserole dish. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain. In a skillet over medium heat, cook the sausage until evenly brown, drain grease. Mix in the cooked pasta and pasta sauce. Pour into prepared casserole dish. In a bowl, mix the cottage cheese, olives, mushrooms, onions, green peppers and mozzarella cheese. Spoon the cheese mixture over the sausage and pasta mixture. Top with pepperoni slices. Bake 25 minutes in the preheated oven, until bubbly and lightly browned.

Glaze: 1/2 cup powdered sugar 1/2 cup lemon juice Preheat oven to 350 degrees. Coat 4 mini loaf pans (or 2 regular size) with vegetable cooking spray. In a large bowl cream the butter and sugar until fluffy. Beat in the lemon juice, zest, and eggs, and vanilla until well combined. In another bowl stir together the flour, baking powder, and salt. Add alternately with the milk to the egg mixture, beating just until combined after each addition. Fold in berries, if using. Marshmallow Frosting {tastes just like gooey soft marshmallow fluff} 4 large egg whites 1 Cup ordinary sugar (white or brown) 1 pinch of salt 1 Tsp vanilla * Place first 3 ingredients into a bowl which you can place over a pot of simmering water.{You could use a double boiler here instead} * Whisk the egg white mixture constantly over simmering water until the sugar dissolves and the mixture is hot to the touch. {It takes around 5 minutes}. * Pour the mixture into a bigger bowl and beat with an electric mixer for 3 minutes. {Add the vanilla while beating}. After 3 minutes, the mixture will be lovely and fluffy Use disposable piping bags – {or you could even use a plastic bag} without a nozzle, simply pipe straight out the end of the piping bag directly onto the cupcakes.

Easy Breakfast Casserole 2 lb hot breakfast sausage 1 (30-32oz) bag frozen shredded hash browns 1 tsp salt 1/2 tsp pepper 1/4 tsp garlic powder 1/4 tsp onion powder 2 cups shredded cheddar cheese 8 eggs 2 cups milk   INSTRUCTIONS: Preheat oven to 350 degrees. In a large skillet, cook sausage until no longer pink. Drain fat. Add hash browns to skillet and cook until lightly brown. Place hash browns in bottom of lightly greased 9×13-inch pan. Top with sausage and cheese. Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over hash brown mixture. **Cover and refrigerate at this point if baking later.** Bake, uncovered, for 35-40 minutes.

  Pepperoni Roll.. use pre packaged frozen dough, cheese, pepperoni, some herbs and olive oil. Loosely cover the frozen bread dough with plastic wrap. Allow dough to thaw for a few hours at room temperature. Roll dough out to approximately 11 x 11 square. One frozen dough log makes one pepperoni roll. Brush dough with olive oil or whatever cooking oil you prefer. Lay pepperoni on dough covering entire surface. You can use sandwich pepperoni from the deli. Sprinkle with shredded mozzarella cheese. Next, sprinkle with shredded Parmesan cheese. You can use grated from a can if that is what you already have on hand…but you can buy the shredded Parmesan in a bag. You’ll find it right next to the other bags of shredded cheese. Lightly sprinkle with Italian herbs…basically, some dried oregano, parsley and basil. Be careful, not too much….oregano can be very strong and you don’t want too much! Add a sprinkling of garlic powder. Roll up dough starting at one edge of square.   Cheesy Smoked Sausage & Potato Casserole Ingredients 3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb 4 tablespoons butter 4 tablespoons flour 2 cups milk 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 lb Velveeta cheese, diced 1/2 cup sharp cheddar cheese, shredded 1 lb skinless smoked sausage 1/8 teaspoon paprika Directions: Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch “half moon” cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown. Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss. Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.). Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top. Bake in preheated 350°F oven for 35-45 minutes. Enjoy!
