Cherry Cheesecake Dip You need: 1 tub of Cool Whip 1 box of Jello no bake cherry cheesecake 1 1/2 cups milk Honey graham crackers Directions: In a large mixing bowl, mix the milk & cheesecake filling mix together for 3 minutes until stiff. Fold the tub of cool whip in. Refrigerate at least an hour. To serve place a big amount of the cheesecake mix in the center of a serving plate, then top with the cherry pie filling. Place the graham crackers all around the dip and serve. Notes: – you can throw away the crust mix that comes in the box or save it in your pantry & use it for a pie crust another time. – it makes A LOT of dip, so if you want to use it all, you will need to also buy a can of cherry pie filling (or you could buy a different pie filling like blueberry and have two dips)

  Chicken Bacon Ranch Pizza Casserole 1 lb. bacon, fried and crumbled, grease saved 2 lb. boneless, skinless chicken thighs 2 tablespoons of ranch seasoning 1 bell pepper, diced 2 clove garlic, minced 1 lb. bow tie pasta, cooked till tender 2 jars of Alfredo sauce 1/3 cup of evaporated milk or regular milk 3 roma tomatoes, diced 4 cups shredded Italian cheese blend Instructions Cut chicken into bite sized pieces, coat with 1 – 1.5 tablespoons of ranch seasoning. Saute in a skillet with 1 tablespoon of bacon grease along with bell peppers and garlic. When chicken is cooked completely, drain grease and liquid from skillet. Return chicken and veggies to skillet. Pour one jar of Alfredo sauce and milk into skillet with chicken. Stir in one teaspoon of ranch seasoning. Simmer for five minutes. Begin layering casserole with half the remaining jar of Alfredo on the bottom of a 13 x 9 pan or two 8 x 8 pans. The layer 1/3 of each of the following pasta, chicken sauce, and tomatoes. Fish Bowl Gelatin: Fills a 2 1/2-quart fish or glass bowl 1 two-liter bottle lemon-lime soda, flat 4 1/4-ounce packages unflavored gelatin 2 drops blue food coloring 2 ounces gummy fish Directions Place 1 cup soda in a large bowl. Sprinkle gelatin evenly over soda, and let stand to soften, about 5 minutes. Place 2 cups soda in a small saucepan over medium heat. Heat until just before a boil. Add the softened gelatin, stirring to dissolve the gelatin completely over the heat, about 2 minutes. Remove from heat. Add the remaining soda and food coloring, and stir to combine. Pour the liquid into the fish bowl. Using a damp paper towel, carefully remove any bubbles that have formed on the surface. Transfer to the refrigerator to chill overnight. When ready to serve, use a sharp knife to make vertical slits in the gelatin; insert the fish in a random pattern to make it look as though they are swimming in the bowl. Keep refrigerated until serving. Serve within 6 hours. Note: To make the soda go flat, twist off cap, and let the bottle stand at room temperature overnight.

Cheesecake Stuffed Strawberries 1 pound strawberries 8 ounces cream cheese, at room temperature 1 teaspoon vanilla 4 tablespoons powdered sugar ⅓ cup roasted, salted almonds, chopped Instructions Core strawberries and cut out additional space in the center of the berry (You’ll need a little extra room for the filling!)Place cream cheese, vanilla and powdered sugar in a small bowl and beat together until smooth. Place filling in a piping bag or a plastic sandwich bag with a corner cut off. Evenly pipe filling into strawberries. Sprinkle top of filling with chopped almonds. Refrigerate for up to 4 hours or serve immediately. Notes Plan to serve the berries immediately if using a cookie or cracker topping so the crushed bits don’t get soggy sitting on the cheesecake filling.

GRILLED TOASTER STRUDEL STRAWBERRY SHORTCAKE INGREDIENTS 4 Pillsbury™ Toaster Strudel™ frozen strawberry pastries 2 cups strawberries, sliced 3 tablespoons sugar 1 cup whipped cream DIRECTIONS Preheat grill to medium-low heat. Place Toaster Strudels directly on grill grate and cook for 3-5 minutes or until thoroughly cooked and heated throughout, turning once with a spatula to allow both sides to get flaky and golden. Remove Strudels from the grill to a cutting board, allow them to cool slightly. In a small bowl, stir together strawberries and sugar. Use a fork to lightly mash the strawberries. Being careful because the inside filling will be hot, cut each Strudel in half with a sharp knife. Place one half of each Strudel on four dessert plates, then spoon strawberry mixture over it, add whipped cream and the other half of the Strudel. Top with whipped cream and garnish with a few more strawberries if desired. Serve immediately.

  EASY PIZZA DIP INGREDIENTS 1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce 8 ounce ricotta cheese 1 teaspoon minced garlic 8 ounce Italian cheese blend 4 ounce sliced pepperoni 1 dash salt and pepper to taste DIRECTIONS Preheat oven to 350F. Mix together the ricotta cheese, garlic, salt, and pepper. Layer at the bottom of a baking dish (8-x-8 or you can do small individual ones).                 New England weather is always something you’ll hear people complaining about… it’s either too cold, too hot, too snowy, not snowy enough, too rainy… blah blah. We New Englanders are never happy with the weather… it’s never just right. When the rest of the US was enjoying their late spring day of sunshine and grilling outside last week. I was stuck in the house with some cold rainy days. I was also sick. I had a little bit of  a predicament… I was cold and sick… so I wanted soup and something hearty that would stick to my bones. But because it’s late spring… I also wanted some BBQ… but with the rain and my cold I wasn’t going outside to cook!
